COOL THINGS TO DO WITH THE CAKE MIXES-besides making the cake...lol

Hello, my name is rustyspoons, I'm new to the site...

Anyway, my question is the following... What other cool things can you do with the cake mixes? Or, in what way can you change the wet ingredients and so on to shake things up a bit?  For instance I once made a FABULOUS dessert called  "Pumkin Gooey Cakes" (recipie was from Paula deen) which used boxed cake mix but was more like some sort of Bar, (but not really just a bar...) when it was done and IT WAS THE BEST THING EVER!!  I MEAN THESE THINGS WERE TO DIE FOR!!! EVERYONE wanted the recipie. So, I'm just wondering, does anyone have any other really cool desserts you can make with cake mix?

Looking forward to meeting nice people here and learning great new things. Hope to hear from some of you soon.

Thank you very much for any replies.

Sincerely,

Rustyspoons

Rustyspoons,

Welcome to the BC site!

Try making cookies with the boxed cake mixes.  A family favorite at my house is Fruit Crunch!  If you're interested, I'll post the basic recipe for you and you can experiment with different cake mix flavors.

Leila,

Here is the recipe for Fruit Crunch.  I hope you enjoy it.

DeeMarie

FRUIT CRUNCH

  • 1 can (1 pound, 5 ounce) fruit pie filling (cherry, apple, blueberry, etc.)

  • 1 teaspoon lemon juice

  • 1 package white or yellow cake mix

  • 1/2 cup chopped nuts

  • 1/2 cup melted butter or margarine

Spread pie filling in bottom of 9-inch square pan.  Sprinkle with lemon juice.

Combine dry cake mix, nuts, and melted butter.  Mixture should be crumbly (like pie dough before you add water to it, so add melted butter slowly so mixture is not too "wet").  Sprinkle crumbly mixture over pie filling.

Bake at 350 degrees for 40 to 50 minutes, or until golden brown.  Serve with ice cream, whipped cream or warm with coffee cream.

COOL THINGS TO DO WITH THE CAKE MIXES-besides making the cake...lol

My sister gave me a cookbook she bought at Cracker Barrel and it's called " 101  Things To Do With A Cke Mix" by Stephanie Ashcraft. It is fabulous. I used it last Christmas to make my cookies. My family couldn't get enough of them. I'm not sure if you can buy it elsewhere but I believe you can. Hope you can find it. It's great. And so easy.

Also, search in any cooking sites or this one and in the search box put "cake mix cookies" if you are looking to make cookies from a cake mix.

DeeMarie,

This sounds great and I think it would also make a great cake for Breakfast to.  Will try it just as soon as finish the cake I just made.

I'm also going to take wvallj advice and see if I can find the book "101 things to do with a cake mix"

Thank's to you both.

Hey, Leila!

I've got a cookbook called The Cake Doctor!  I'll have to dig it out and find something interesting.  I've used several of the recipes in it, but haven't used it lately.

Have a great evening!

COOL THINGS TO DO WITH THE CAKE MIXES-besides making the cake...lol

I've made a cake for two.  Only thing is, I used 4 inch pans and made a 2 layer cake from 1/2 a box of cake mix, cook it for 12-15 minutes.  Also, the Cake mix cookies and they are yummy.

Here are the recipes.

BAKE A CAKE FOR TWO
Use this formula to make two cakes out of one two-layer box.

1 3/4 cups cake mix (from a two-layer size box of cake mix)
2/3 cup water
1/4 cup oil
1 egg

Preheat oven to 350 degrees F.

Combine ingredients in an ungreased 8 or 9-inch pan and beat with fork until well blended. Spread batter evenly in the pan.

Bake at 350 degrees F for 30-35 minutes or until toothpick inserted in center comes out clean.

Banana Cake
1 3/4 cups cakes mix (from a two-layer size box of cake mix)
1/2 cup miniature chocolate chips
2/3 cup water
1/2 cup mashed banana
2 Tbsp. oil
1 egg

Preheat oven to 350 degrees F. Grease an 8-inch square baking pan.

Mix all ingredients in a medium bowl. Pour into prepared pan.

Bake at 350 degrees F for 30-40 minutes or until toothpick inserted in center comes out clean.

----

These cookies are easy!

Cake Mix Cookie
1 package of cake mix (any flavor)
1 large egg
1/4 cup of oil
1/4 cup of water
1 cup of chopped nuts, raisins, oatmeal, coconut, chocolate chips, M&M'S® etc. (anything you like in cookies)

Heat oven to 350 degrees. Combine cake mix, egg, oil, and water. Beat until well blended.

Stir in remaining ingredient(s).

Drop by teaspoon about 1 inch apart onto greased cookie sheet.

Bake for 15 minutes or until done. Makes about 4 dozen.

COOL THINGS TO DO WITH THE CAKE MIXES-besides making the cake...lol

Hi Rustyspoons,  I dug through my very old accordian style recipe holder that has been taped together from so much use... it was a wedding gift back in 1970. This recipe I'm posting was on a cake mix box back in that same year and it was the first "bars" I made from a cake mix, and the first "bars" I ever made my husband. To this day, it is still one of our favorites.

FUDGE FILLED PEANUT BUTTER BARS

1 pkg. yellow cake mix

1 cup peanut butter

1/2 cup margerine

2 eggs

FILLING:

1 cup chocolate chips

1 1/2 cups sweetened condensed milk (not evaporated)

2 TBSP. margarine

1 pkg. coconut pecan or coconut almond frosting mix

Combine cake mix, peanut butter, margerine, and eggs. By hand, stir till dough holds

together. Press 2/3 of dough into bottom of an ungreased 13 x 9 pan.

In a sauce pan combine chocolate chips, milk, and butter, over low heat, stir until smooth.

Remove from heat and stir in frosting mix.

Spread filling over dough. Crumble remaining dough over filling.

Bake at 350 degrees for 20 to 25 minutes, until done. Cool. Cut into 36 bars.

What can be better than chocolate and peanut butter?

Enjoy! Midnight Gemini
